The harvest season is very much upon us here at ONX Wines and we would like to invite you to be apart of this exciting time of year. With that said, we are pleased to announce another seminar in our Winemaker Education Series. Associate Winemaker Jeff Strekas and Enologist Drew Nenow will both be taking time out of their busy harvest schedules to go over the intricacies and efforts that go into a successful harvest.
We will start the morning out at ONX Estate Vineyard with a walk through the vineyard, tasting fruit straight from the vine and learning the dynamics of each individual varietal. Jeff and Drew will then take you through the process of what goes into a pick when the fruit is ready to come off the vine. This is also your opportunity to learn the aspects of calling a pick, how a picking crew is assembled, and the differences in ripening patterns of different varietals.
Once the grapes have been picked, they then have to be processed. After the vineyard tour we will then head over to our production facility in Tin City. Here we will see the process of turning fruit into wine. Get your hands on some processing equipment and geek out on cold soaking, inoculation, and fermentation. Our final stop of the seminar will be in the barrel chai where the wine “rests” before bottling. Learn about our oak program and taste a few samples of what's coming down the pipeline.
After the seminar join Jeff and Drew for lunch in the cellar catered by Thomas Hill Organic and get the rest of you harvest questions answered.
